Morning Glory Muffins

Preheat oven to 350 degrees

Ingredients

2 cups flour ( whole wheat is best but all purpose is fine as well)

1/2 cup flax  seed

2 tsps baking soda

1 large chunk of ginger minced   (or 1-2 tsps ground ginger)

2 tsp cinnamon

2 eggs 

1/3 cup coconut oil or vegetable oil

1/2 cup apple sauce

1/4 cup agave nectar or honey 

1  orange juiced

1-2tbs orange zest

1-2tsps orange extract ( if you have - otherwise its just as good without )

1/2 cup sunflower seeds

1/3 cup nut of your choice 

2-3 carrots shaved

1 apple diced

1/2 golden raisins

Instructions

  • In a large bowl Combine flour, flax seed, baking soda, cinnamon,  ginger, and orange zest and set aside.

  •  In seperate medium bowl whisk the eggs then add in oli, apple sauce, honey and orange juice, and orange extract  till you achieve  one consistency. 

  • Into the wet ingredients fold the following  shaved carrot, raisins.  diced apple, sunflower seeds and nuts

  • Pour the above mixture into the flour ensuring that all ingredients have fully integrated.

  • line muffin tray or use oil/ butter to avoid having the muffins stick - scoop 1/3 cup of batter into each to start and then use whatever is left to even out the muffins - as best you can- or make them uneven on purpose.

  • Bake at  350 for 15-20 mins. I tend to check at 15 mins and go from there - I also like to keep my muffins on the lower rack so that they brown slower- this will depend on your oven.

  • cool and serve or store for a nice healthy snack ! Play around with fruit and nut combinations and ratios and please send me your results and ideas !
