Kale and Sweet Potato Soup with Lentils

Ingredients

  1. 1 large onion diced

  2. 1 whole garlic minced ( 12 cloves if you are not a garlic lover the way I am)

  3. 4 tablespoons of Olive Oil or butter

  4. 1 inch ginger grated or minced

  5. 2-3 sweet potatoes diced

  6. 1 head kale chopped

  7. 2 carrots diced

  8. 1 bullion cube

  9. 8cups water * or 8 cups vegtable stock to subsitute for bullion cube

  10. 2 bay leaves

Directions

  1. Heat Olive Oil or butter in large size pot

  2. Add diced onion and cook on medium heat until onion is translucent

  3. Lower heat and add minced garlic & ginger heat 2-5minutes

  4. Add in water and bullion ( let bullion dissolve) / or stock

  5. add bay leaves

  6. Add kale, carrot and sweet potatoe and let simmer on low for about 45minutes

  7. checking for softness of the sweet potatoes and carrots

  8. Cook lentils seperate with 2:1 ratio of water to lentils

    • enojy with any bread of choice
