Cranberry Orange Scones
INGREDIENTS
2 cups flour
2 1/2 Tsp baking poweder
1/2 cup brown sugar ( you can use any type it may alter the consistency
3/4 cup unsalted butter - make sure this is cold - leave in frig till you need to add
1 egg- at room tempature
1/2 -3/4 cup heavy cream ( for healthier/ non dairy version you can use milk)
1 orange for zesting and juice
1 tsp orange extract (optional - it adds to the taste- if you perfer less orange omit this)
1 1/2 tsp vanilla
1 1/2 cup cranberries
DIRECTIONS
Pre heat oven to 375. Either lightly grease a pan or place foil on pan - your choice.
Zest the orange and then squeeze the juice - set aside the juice to be incorporated towards the end.
In a large bowl combine the dry ingredients flour, sugar, salt and baking powder. and orange zest and cranberries.
Cut the butter into small cubes with a knife and incorporate using either food processor or by hand, I love working this by hand,but if you perfer not to get dough hands, and have access, use a food processor. The butter should be pea size and well mixed into flour.
Add the wet ingredients one at a time mixing after each one : egg, heavy cream (or substitute), vanilla, orange extract and orange juice.
Gather the dough into a crumbly ball and then place on a well floured surface. Do not over work the dough or it will become to stiff and loose the flakeness from the butter.
Be creative, you may either make a circle and cut into triangles or use a cookie cutter and make fun shapes. The dough is easy to save and use the next day, simpley wrap in foil and place in frig.
Set a timer for 15 mins. Depening on your oven they may take between 15-20 mins. You can sprinkle brown sugar on top either before placing in oven or during the cooking process, I pefer to place the sugar on about 5-10 minutes into the baking process so it doesnt over burn.
Serve with a silce of orange if you like and guests can easily squeeze the desired amount on top or eat.
