Thai Curry Chicken Noodle Soup

Ingredients

  1. 1 pound chicken breast diced and seasoned

  2. 2-4 tablespoons olive oil

  3. 1 medium size onion diced

  4. 1 large red bell pepper diced

  5. 3-5 cloves garlic minced

  6. 2 tablesppons grated ginger or more depending on how much ginger you like

  7. 1 can coconut cream or milk

  8. 8 cups chicken stock

  9. 1-2 tablesppons fish sauce

  10. 2 table spoon brown sugar

  11. 1/2 pack of 8oz. Rice Noodles.

  12. 3-6 green onions thinly sliced( cut length wise)

  13. 1 buch of cilantro chopped

  1. In a large pot add olive oil and let it heat

  2. add chicken and cook 5 minutes or until almost brown dont over cook. Remove chicken and set aside. You can choose to leave the chicken in, just cook for less time.

    3. In same pot add onion and let cook on low for 3-5 minutes till soft and translucent.

    4. Add red pepper, garlic let cook just till fragrant

    5. Add red curry paste and ginger- make sure that paste breaks apart and no chucks are left behind.

    6. Add chicken stock and coconut cream and stir allow to cook for about 10-15 minutes

    7. Add chicken and allow to cook five minutes

    8. Stir in noodles, fish sauce and brown sugar - cook till noodles are soft

    9. Just before serving add green onions and clinatro - stir and serve immediately
