Orzo Pasta Salad

3 cups uncooked Orzo

1 cup or more parmesan cheese

2 cups grape tomatoes

1 fresh lemon

1-2 tbs or more Extra Virgin Olive Oil

2 tbs Balsamic Vinager

1 cup or more canned chick peas - drained and rinsed

hand full or more italian parsley coursely chopped

salt and peper

  1. Cook Orzo in large pot for no more then 8 minutes. Add salt, pepper, EVO and 2-3 bay leaves to the water. remove immediatly and rinse with cold water to stop cooking process.

2. In large bowl mix cheese and juice of lemon. Add EVO and balsamic vinager

3. Cut cherry tomatoes in half and add to bowl

4. Coursley chop the parsely and add. (original reciepe also calls for basil - leaves rolled up like a cigar and chopped)

5. Add chickpeas

*orginal recipe also calls for toasted pinenuts

6. Toss in the cooked Orzo and add more EVO and balsamic vinager.

Taste, adjust and enjoy
