Thai Pumpkin Soup

Ingredients

1 large onion diced

2-4tbs olive oil (or butter,or oil of choice)

6-9 cloves garlic

lemon grass

2-3 inches of ginger minced (original recipe calls for grated but I enjoy a few chunks of ginger)

1 can pumkin puree

4 tbs yellow or red curry powder paste

1 can coconut milk

2-3 cups vegetable broth

2tbs ginger paste or powder

cilantro ( optional garnish )

Directions

  1. In large pot saute onions for 3-5mins till translucent

  2. Add in garlic, ginger, lemongrass and curry paste let simmer another 3-5minutes

  3. Add broth and pumkin puree simmer and stir

  4. add in coconut milk

  5. let cook for about 20-30mins stiring ever so often.

  6. Serve with side of Rice.

  7. orignal recipe calls for hand blender or placing into standing blender to fully puree ingredients. I had neither still tasted amazing.
