Mango salad with Red Pepper and Lime Dressing
Mango Salad
Ingredients
4 mangos just barely ripe and sliced thin
1 large or two small red bell peppers
1 red onion sliced thin and with center removed
1 slightly barely ripe avocado ( not to soft) optional
Dressing
Juice of 2-3 limes
Zest of one lime
Red pepper flakes or black pepper ( freshly cracked if available)
Pinch or more salt ( course salt is best)
sunflower seeds (optional)
Preparation
Peel and slice mango as thin as possible
de - seed and cut red pepper in half then slice very thin.
De pit avocado and then dice into small bites
Slice onion very thin and leave out the middle - The middle tends to be more chunky and takes away from consistency of texture
Coarsely chop cilantro and use stems - they have even more flavor then leaves
Place above ingredients in large bowl
Dressing: You can either make the dressing separate or just place it directly into the salad.
Use a spoon to lightly toss the salad as to not break the avocado or mango into mush
Serve as a side salad or just as a nice light lunch !
Tips
Play around with the amount of cilantro you use
Add basil if you want even more flavor
Subtract the avocado to let the mango flavor shine even more
Add sunflower or pumpkin seeds for a little crunch
