Lemon Rhubarb Bars
Ingredients
Crust
¾ cup flour - wheat or pastry
¼ cup butter softened
¼ cup brown sugar
Filling
1 ½ cup rhubarb chopped small
1 large lemon or more ( juice and zest)
¾ cup brown sugar
1/4 cup honey or agave
2 eggs
¼ tsp baking powder
Preparation
Preheat oven at 350
Combine sugar and butter for the crust until smooth and consistent in texture, then add in flour until the mixture is crumbly but easily sticks together.
Grease an 8” by 8” square pan or any small pan you have and place the crust batter into the bottom. Bake for 8-10 minutes then let cool before adding filling.
Filling : place chopped rhubarb on top of crust
Combine sugar, honey, eggs( one at a time ) until fully combined. Add baking powder and lemon. Stir till blended
Bake for 30 minutes and then check. Bake longer if needed. Let FULLY SET. and Serve.
- I served this we creme fresh which is bit less sweet then whipped cream - I really liked the taste contrast.
